- 1½ lbs boneless, skinless chicken thighs, cut into 1-inch pieces
- 3 cups broccoli florets (about 1 medium head)

- For the teriyaki sauce:
- ⅓ cup low-sodium soy sauce
- 3 tablespoons honey
- 1 tablespoon rice vinegar
- 2 cloves garlic, minced

How to Make It
- Start your rice first so it finishes right as the chicken does. Follow the package directions and keep it covered off heat when done.
- Whisk together the soy sauce, honey, rice vinegar, and minced garlic in a small bowl. Set the cornstarch slurry alongside it — you'll add that at the end.
- Heat 1 tablespoon of oil in a large skillet or wok over medium-high heat until shimmering. Add the broccoli in a single layer, season lightly with salt, and cook without stirring for 2 minutes to get some char. Toss and cook another 2 minutes until bright green and just tender. Transfer to a plate.
- Add the remaining tablespoon of oil to the same pan. Season the chicken pieces with salt and pepper, then add them in a single layer. Cook undisturbed for 3–4 minutes until golden on the bottom, then stir and cook another 2–3 minutes until cooked through.
- Pour the teriyaki sauce over the chicken. Let it bubble for 1 minute, then stir in the cornstarch slurry. Cook another 30–60 seconds, stirring, until the sauce thickens and coats the chicken in a glossy glaze.
- Return the broccoli to the pan and toss to coat. Taste and adjust salt if needed.
- Divide rice into bowls, spoon the chicken and broccoli over the top, and finish with sesame seeds and scallions.

- Swap the protein. Salmon fillets or extra-firm tofu (pressed and cubed) work beautifully here with the same sauce. Salmon takes about 3–4 minutes per side; tofu benefits from a slightly longer sear to get crisp edges.

- Storage. Leftovers hold well in an airtight container for up to 3 days. Reheat in a skillet over medium with a splash of water to loosen the sauce rather than microwaving it dry.
